Rich shortcrust pastry

Ingredients:

250grs plain flour

1/2 tsp fine sea salt

125 Chilled butter (very important!! cut it in small pieces)

1 egg yolk beaten with 2 tbsp of cold water

Sift the four with the salt  into the food processor and  add the chilled small cubes of butter.Pulse the mixture together until it resembles fine breadcrumbs. Add egg yolk and water mix a tbsp at a time and pulse it until the dough begins to come together. Do not pour more mixture is not needed. Pastry should just come together. Tip onto a worksurface, use your hands to gently press the dough into a disc. Wrap with clingfilm and rest for at least 30 mins or longer.

You could add herbs to the pastry or sugar if you are making a sweet pastry (add 2-3 tsp of sugar before adding the liquid)

This picture shows 3 different pastry mixtures (fine breadcrumbs) before adding the liquid. First one is the butter hasn’t been mixed enough with the flour and in the the last one it has been overwork (butter gets too warm and lumpy). Try to get the middle one consistency!
